Traveling
My wife and I are in France for a couple of weeks. Right now we are in Burgundy at the Hospices de Beaune.
It is mainly for the trade but we are here for the scene.
French food has always been great. You go to a hole in the French place and the food is good. I went to a run of the mill bistro in Paris and had the steak tar tar. Was fine. I have had better but it was decent.
Yesterday we had a terrific lunch at a highly rated place. When you go to those kinds of places your expectations are high. We had sole menieur and a nice 2020 Chassagne Montrachet white burgundy.
For dinner we wound up at a small bistro recommended by our hotel. We are staying at La Cep and I recommend it highly.
I had a braised pork dish. It was fantastic. Braised pork cheeks. But, it was the little things. Toasted sesame and pumpkin seeds. Finely chopped chives, green onions, and kelp. A reduction of the pork stock with demiglace. I drank a low priced village burgundy with it and it was perfection.
Some places cook like that in America but you will pay for it. At this bistro my cost was 27 Euro for the dish and 14 Euro for the wine.
French cheeses are legendary. We always order the cheese course. At the hole in the wall French bistro we ate at in Paris we got four very nice cheeses after our meal. If Elon does one thing with this DOGE effort I hope he can change FDA laws so American cheese producers can innovate and make cheese like the French.
No one is dropping dead here and have’t for hundreds of years.
One of our favorite towns and hotels anywhere. Our daughter got her Masters in Beaune, plus it was on the way between family houses. Can’t get there enough. And yes, always order the cheese course, especially in Bourgogne!
